Preparation
Take 6 nice big red onions and peel. Cut them with a knife with a depth cut of about 2 cm (¾"), creating a sort of asterisk on the top of the onion. Place them on a baking sheet, add oil, salt and pepper and bake at 350°F for about 20 minutes. Onions, while cooking, will open to bloom along the cuts. Separately, peel the potatoes and cut them into small cubes. Sauté in a pan with oil and salt. When the onions are opened, then at the end of cooking, remove them from the oven. Sprinkle Pancetta Cubetti over the onions and oil again, possibly using a silicone brush. Put them back in the oven for about 5 minutes, until the Pancetta is lightly browned. Remove from oven, combine with the potato cubes and serve.
