Squares of agretti omelette with San Daniele ham

Ingredients

  • 150 g boiled agretti
  • 1 clove of garlic
  • extra virgin olive oil
  • 5 eggs
  • 20 g grated parmesan
  • 120 g San Daniele ham
  • salt
  • black pepper

Preparation

  1. Wash the agretti, remove the root part and put them in a pot without water.
  2. Cook for about 15 minutes.
  3. Drain them, cut and put them in a pan with extra virgin olive oil and one peeled clove of garlic.
  4. Cook for a few minutes on a high heat.
  5. In the meantime crack open the eggs inside a bowl and add the grated parmesan, the freshly ground black pepper and a pinch of salt.
  6. Remove the clove of garlic and pour the egg-based mixture in the pan.
  7. Cook the omelette for a few minutes and, once it is well compact, turn it upside down, using a lid.
  8. Finish cooking and serve the omelette cut into squares, completing with a slice of San Daniele ham.
  9. Serve.
