Cut the Citterio® Chorizo into thin rounds then into strips and set aside.
Fill a large pot with water and bring to a boil. Once boiling, season with 1 Tablespoon of salt. Add the spaghetti and cook until al dente, about 8 minutes. Before draining, reserve 1/2 cup of cooking liquid to be used for the sauce.
While the spaghetti are cooking, heat a large skillet over medium heat. Add olive oil to the skillet along with the sliced Citterio® Chorizo and sliced garlic. Cook on medium-low heat, stirring occasionally, for 3 to 5 minutes, then lower the heat to low.
Add the cooked and drained spaghetti to the skillet along with the reserved cooking water, grated parmesan, and calabrian chiles. Using tongs, toss the pasta to coat evenly with the sauce. Taste and adjust seasoning.
To serve, top with freshly chopped parsley and more grated parmesan.
