Mortadella Sandwich with Ricotta and Pistachio Pesto

Ingredients

  • 4–5 slices Citterio Mortadella
  • 2 slices sourdough bread
  • Olive oil (for brushing)
  • Ricotta cheese
  • Pistachio basil pesto
  • 1 tsp pistachios, finely chopped

Preparation

  1. Toast the sourdough bread and brush lightly with olive oil.
  2. On one slice, spread a layer of ricotta followed by pistachio basil pesto.
  3. Layer the CITTERIO mortadella slices on top.
  4. Sprinkle with chopped pistachios and add a handful of arugula.
  5. Top with the second slice of bread, slice in half, and enjoy!
