Mortadella Sandwich with Ricotta and Pistachio Pesto

Ingredients
4–5 slices Citterio Mortadella
2 slices sourdough bread
Olive oil (for brushing)
Ricotta cheese
Pistachio basil pesto
1 tsp pistachios, finely chopped
Preparation
Toast the sourdough bread and brush lightly with olive oil.
On one slice, spread a layer of ricotta followed by pistachio basil pesto.
Layer the CITTERIO mortadella slices on top.
Sprinkle with chopped pistachios and add a handful of arugula.
Top with the second slice of bread, slice in half, and enjoy!
